I used to (still do but not same scale) selectively breed guppies. Similar criteria applies:

1. Pick characteristics that appeal to you: This will ensure you will stick with selectively breeding for what you like over number of generations. People who decide to selectively breed for what others like never last the distance. Selective breeding means long haul and multiple generations and many years of effort. Only selectively breeding for what appeals to you will make you keep going.

2. Pick for characteristics that is apparent in your gene pool: Going for a green shrimp when your shrimp are yellow is not going to work. Look at each individual (and sibling) carefully what are the characteristics that are the most common amongst all of them? These will be the easiest characteristics to establish.What are the characteristics that only a few of them have? As long as it has appeared in more than one, it will take longer but the characteristic can be established through careful selection. Desirable characteristic is only apparent on a single individual? Continue to breed the parents in the hope that they'll produce another. If not breed the individual to its parents or siblings with similar characteristic.

3. Pick more than one direction to go: This means have two or more breeding goals. This would also mean you'll need to dedicate more than one tank to the breeding program. Going in slightly different directions in related lines would create some interesting results. Sometimes the initial direction chosen is not possible with the available gene pool. Though this might only be apparent after a number of generations (years). Having more than one direction will ensure the breeding program continues to go forward even with set backs. Also having different lines gives the opportunity to cross lines down the track for strengthening the lines.

Characteristics are typically; colour, pattern and size.
