Hi!

Hoping someone can help me identify what this white 'fungus' is? Is there anyway way, other than manual removal, that I can get rid of it?

Tank is about 6 months old.

It's just some fungus, and is harmless. It's quite normal for driftwood to get that.

It should disappear by itself, but you can remove it manually if you cannot wait.

You don't usually see it in tanks with plenty of plecs or bristlenose as they often like to eat it. But in shrimp tanks its very common.

Sometimes yes. Theres a large number of wood fungus species and they all look the same lol. Can be hit and miss with herbs.
